Some of the most ambitious mostly unheard of mods out there. Many of which are not stable but still impressive. Most don't add content to the game but what they do is still incredible to me.
CubicChunks "Infinite" world height in a 3D space. I don't think any other game has achieved this without faking it. (Unstable)

LittleTiles The best creative building mod I've ever seen. People can do much more with this mod than they realize. It's more than just "little blocks".

Made a little cottage with the Chisel and Bits mod, planning to make a garden around it.
According to this page you are able to convert c&b structures into lt and back. So you should be able to convert it all into littletiles. This video appears to show the process but it might be outdated.
