How can I add multiple reference images with varying perspectives to model off of? (Best described as manual photogrammetry, details and exampels below)
However, traditional methods (Like these photogrammetry addons: https://github.com/SBCV/Blender-Addon-Photogrammetry-Importer, https://www.blendermarket.com/products/pcv ) haven’t worked, due to the reference images these being varying quality screenshots, rather than actual uniform photos. I had the idea of somehow using photogrammetry software to align these images (Creating a point cloud), and importing the aligned files into Blender, but that hasn’t been successful.

Projection Mapping part 2 Modeling
For Blender 3.0+ install the file "fSpy-Blender-1.0.3.zip" from https://github.com/stuffmatic/fSpy-Blender/releases instead of the one that ends in "Master". That one works.

Projection Mapping
Projection mapping lets you quickly create realistic scenes by projecting a photograph as a texture onto simple 3D geometry. In this first video we look at using the free fSpy add-on and app to create a 3D Camera for Blender that matches a photo. https://github.com/stuffmatic/fSpy-Blender

Does anyone know of good guides/documentation for modeling vehicles from perspective images?
FSpy can set up a .blend file to model in using any photo.
-
How can I get the exact focal length of a reference image?
It sounds like you would be interested in fSpy and its Blender add-on. By specifying where some parallel and/or orthogonal lines are in the photo, the program can recreate the camera. The result can be imported into Blender as a camera object by using the add-on.
