"Essential" is debatable, but there are some good mods that aren't available for pre-EE games (to my knowledge). eg Trials of the Luremaster and Test your Mettle are both very nice dungeons (ported from Icewind Dale and Planescape: Torment), and most of Lava's excellent Athkatlan Grounds mods are EE-only. As for tweaks etc, that really depends on what you're actually looking for, but there aren't any EE-only tweak mods I'd consider absolutely essential.
  • BGII EE essential mods

If you want a challenging dungeon crawl, Tower of Deception, Trials of the Luremaster (ported from Icewind Dale), and Test Your Mettle (ported from Planescape: Torment) are fun.

Are you thinking of argent77's TOTLM in BG2EE? I think it might've been on SHS originally. Sort of similarly, there's Test Your Mettle, which imports the Modron maze from Planescape: Torment.

What are some alternatives?

When comparing Almaterias-Restoration-Project and A7-TotLM-BG2EE you can also consider the following projects:

A7-TestYourMettle - A mod for BG2:EE and EET that provides you with a unique dungeon crawling experience.

Assassinations - A Questmod for Baldur's Gate II (BGII, BGT, BGII:EE, EET)

bg1ub - Similar to its BG2 cousin, BG1 Unfinished Business ("BG1UB") is designed to restore many of the cut items, quests, dialog, and encounters from the game's final release, as well as try to tie up some of the "loose ends."

The_Boareskyr_Bridge_Scene - A mod for Siege of Dragonspear that gives more impact to the important scene at Boareskyr Bridge.

Under-Respresented_Items - This mod adds items to Baldur's Gate 2. The items come from Icewind Dale 2. Only certain kinds of items were chosen. Items were selected to flesh out smaller weapon families.

Back_to_Brynnlaw - A Questmod for Baldur's Gate II (BGII, BGT, BGII:EE, EET)

Black-Hearts

Ascalons_Questpack - Adds several small quests to BG1 and BGII. For BGT, Tutu, BG:EE, BGII, BGII:EE, and EET.

CowledMenace - Unravel the mysteries of the Twisted Rune and investigate the Cowled Wizards in this Enhanced Edition Trilogy mod!

Black-Hearts-BG2 - Black Hearts for BG2 (separate install)

EndlessBG1 - Remain in BG1 after Sarevok's Fall - with more Content inspired by Siege of Dragonspear! A Mod for BG:EE, BG:SoD, BGT, and EET!

Alternatives - Alternatives offers two new possibilities to consider when making the decision about whether to side with the Shadow Thieves or with Valen's Mistress. In addition to the traditional two, the player may now opt to side with a group even the paladins in the party could have no objection to... or he may opt to skip the whole decision entirely and set sail for Maztica. Alternatives also offers a different way to satisfy Mae Var's demand that the protagonist steal an artifact from a temple and an alternate way to complete the Riddle of the Sewers. https://www.gibberlings3.net/mods/quests/alternatives/
