Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

It really depends on how you plan to use your projects: Is it for personal use only? Do you want to use it as a cli application or a standalone package or just some loose script collection? If you want to get an idea of how to structure bigger projects, I recommend you to take a look at https://github.com/cookiejar/cookietemple. (Disclaimer: I'm one of its developers).
