Standalone Emulators?
351elec and arkos are still actively updated. Whenever an emulator is discovered that is capable of running on these devices they add it. There just simply isn't very many stand alone emulators because it's difficult to configure them to run on these devices.

Building my rg351v with a Mac
build implies creating a flashable image from source code. Reference https://github.com/351ELEC/351ELEC for build instructions. Since the build instructions are made for Ubuntu 20.04, you may have troubles getting it functional.

Thinking of buying a RG351M - Final Fantasy VII, Amiga, MS-DOS???
When you get the device you'll want to replace the firmware with either 351elec or ArkOS. The firmware that it comes with (EmuElec) is very outdated and not good.

Can the RG351 actually run any N64, PSP or Dreamcast games to the point where you can actually play them???!
If you bought a RG351 for N64, PSP, or Dreamcast I think you are out of luck, some games from all said systems are playable but no where near the full library. It will be incredibly hit and miss but the first thing, if you want to keep it, is use new SD cards, Samsung or Sandisk are fine. Also the stock firmware is streets behind the latest 351Elec. Flash that to a 16GB card, get a nice big SD card for your roms, and if you want snapshots etc boxcovers, look for No Intro rom collections.

For retro gaming there is batocera, lakka, retropie, recalbox or you can install a minimal distro like arch and set up it all youself.

Are you trying to make an "Windows XP Emulation station" or just "I want to play emulators on this free computer". If option 2 is what your looking for, ditch XP and install something like https://batocera.org or https://www.lakka.tv and you will be FAR FAR better off.
